Halal French Malayan Cuisine restaurant – The White Label

The White Label is a Halal French Malayan Cuisine restaurant that aims to be a lifestyle destination for Diners. Located in the hustle and bustle of the iconic Kampong Glam area, The White Label offers a relaxing oasis to dine in and kick back with friends and families.

Directors & General Manager of The White Label, Marc realised that there is a lack of Halal French cuisine in the local dining scene. That is because traditionally, lardons, aka the French bacon is practically a staple in many French cuisines. Made of small thin strips of pork meat, bacon lardons are an easy way to add flavour to a dish, without necessarily adding a lot of meat. Hence by replacing those non-halal components and adding local flavours, The White Label was born.

The White Label Specialities

When asked about specialities that they would recommend, Marc named a barrage of French cuisines.

For his personal favourite, he would strongly recommend the Lobster Bisque that’s made in-house daily.

To whet the customer’s appetite, one of the all-time favourites would be their Vol-au-vent, which is traditionally made with a baked puff pastry filled with meat or seafood in cream sauce. This Authentic French Cuisine is given a local twist by using Kueh Pie Tee instead of puff pastry and Sambal Belado instead of cream sauce.

For pasta lovers, Marc recommends their Squid ink spaghetti which uses the traditional “Sotong Masak Hitam” instead of just normal squid ink.

As for the main course, the crowd favourite would be the Cherrywood Smoked Contre-filet. The chefs meticulously aged the striploin steak in butter to achieve a creamier and softer texture and smoke it with cherry wood imported from overseas to achieve a delightful smokey flavour on those tasty morsels.

And to top it all off, the speciality dessert would be the Le Jadin du Chocolat (The Chocolate Garden) which is very well received by chocolate lovers.

Challenges and Uncertainties

Marc Chua, Director & General manager of The White Label

To open a new F&B business during the pandemic presents many uncertainties as the food and beverage (F&B) sector have to ride the numerous judgement calls of tightened restrictions and dine-in bans.

Though the government did try their best to support small businesses via grants, supplies issues to manpower issues like the lack of staffing from Malaysia are headwinds to the business.

Currently, their sales have decreased by about 30% compared to during the 8 pax dining era, but The White Label is still managing to get by. When asked about what is the toughest challenge that they constantly face, Marc replied that for all F&B owners, the fear and anticipation of any announcement by the MTF was the biggest roller coaster ride.

This Christmas, Marc wants to showcase a variety of dishes not common in most Halal restaurants and incorporate local flavours into them.

This can be seen in their Beef Wellington where it is incorporated with a traditional Peranakan ingredient – Buah Keluak. Their spiced quail is infused with a variety of local spices such as cumin and fennel. Their Mille Feuille is also constructed using the Malay Kueh Layang Layang.

The White Label will be revamping their main menu again for Spring & Summer to keep us looking forward. They will also be revamping their popular Parisian High Tea in the coming weeks as well!

One can expect even more interesting dishes and ingredients to tantalize those taste buds! This ever changing innovation towards their dishes will certainly make loyal customers come back for more throughout the years.
